I’m looking for some info on how too differentiate between mercury m2 jet drive motors. Is all carb models the 210 hp or do they offer carb in the 240hp

Not sure what your question is, but all of the 240's should have been EFI. That being said, the 240 EFE came in two flavors, and the older of the two had a round air cleaner like the one in your photo. The newer had a cowling on it.

Unless the old round air cleaner was carbed. In the SeaDoo world, when they used the 240 EFI, both the round and big cowling were EFI. Those were in the early 2000's. Our 2003 was the first of the newer generation.

Good luck.
